Balsamic Roasted Baby Carrots

1/4 cup balsamic vinegar

1/4 cup extra virgin olive oil

2 Tbsp. maple syrup

1/2 tsp. crushed red pepper flakes

1 1/2 lb. baby carrots

kosher salt and freshly ground black pepper

Preheat oven to 400 degrees. Combine all in a bowl and mix. Put on baking sheet and cook for 30-40 minutes, until slightly charred and fork-tender. I found this wonderful recipe on Delish.com
